Each year we have a special “food of love” open house weekend which is around Valentine’s time and we invite a celebrity chef to join us for the weekend. This year Henry Brosi, Executive Chef at the Dorchester Hotel in Park Lane joined us together with a member of his brigade.

The Dorchester has only had seven executive chefs in its 70 year history and Henry follows in the footsteps of Virlogeux, Kaufeler and Mosimann. Born in Germany to a family that had both a restaurant and a vineyard it is not difficult to see how he chose to be a chef.

His early apprenticeship included a variety of restaurants in Austria and Germany before going to the Waldorf Astoria in New York. He became Sous Chef at Claridges in 1990 and in 1995 left to join Willi Elsener at the Dorchester later being promoted to Executive Chef and responsible for all the restaurants in the hotel. He himself cooks personally in his newest venture – the Krug Room.

Henry cooked with our own chefs Kevin Dalgleish, Gary Leishman and the Ackergill team as well as orchestrating a demonstration and joining in the weekend, which makes for a highly stimulating culinary experience with loads of fun and lots of good food and wine.

This weekend is of course a classic for culinary delights but also a wonderful opportunity to walk up an appetite on our five miles of sandy beach, if the weather permits a few holes of golf or take a tour of the harbours of Caithness each with their own history and charm. Or, simply curl up in front of the fire with a good book, and just wait for the gong!
